GRILLED CHILI-LIME CHICKEN TACOS - MY EXHIBITION ACTION!


 

A delicious chili-lime chicken taco with a sour cream slaw, sweet mango, and avocado. The perfect meal!

SERVES 4 PEOPLE

INGREDIENTS:

1 pound chicken

1 tablespoon fresh lime juice

3 teaspoons honey

2 garlic cloves, finely minced

1 tablespoon chili powder

1/4 teaspoon red cayenne pepper

Salt and freshly ground pepper, to season

8 small corn tortillas

1 ripe avocado, diced

1 ripe mango, diced

Avocado and extra cilantro, to garnish

FOR SLAW

2 cups shredded red or napa cabbage

2 tablespoons fresh chopped cilantro

1/4 cup low fat sour cream

1 tablespoon fresh lime juice

Salt and pepper to taste

INSTRUCTIONS:

1. Preheat grill to medium-high heat. Place the chicken in a large plastic bag and add olive oil, lime juice, honey, garlic, chili powder, cumin, and cayenne pepper. Season with salt and pepper. Close the bag and massage seasonings into the chicken. Let it marinade for 20 minutes.

2. Prepare slaw: In a medium bowl combine cabbage, cilantro, sour cream, lime juice, and salt and pepper to taste. Place in refrigerator.

3. Remove chicken from marinade. and place onto a hot grill. Grill chicken for 3-5 minutes each side, it will vary depending on the temperature of your grill. Typically the second side will take less time. Remove fish to a hot plate.

4. Grill tortillas for 10-20 seconds each side. Divide chicken equally into tortillas, add slaw, and mango and avocado. Garnish with extra cilantro, if desired. Makes 8 tacos total; 2 tacos each.

On Tuesday the ninth I did a after-school cooking class for my exhibition action. My exhibition topic is the importance of learning how to cook for life. The activity itself was a blast. the process took longer than I thought but in the end we finished the dish and it was delicious!
